Avocado Salad

Just because it’s a salad, doesn’t mean it’s not delicious! This avocado and cucumber salad with a homemade, tangy feta dressing looks sensational but it’s so simple to make.

Plus, because it’s made using a2 Milk™ a fresh cows’ milk that naturally contains only the A2 protein and feta cheese made with either goat’s or sheep’s, your salad will be completely A1 protein free!

  • 1 English Cucumber, diced to ½ inch
  • 2 avocados, diced to ½ inch
  • 2 tbsp. Fresh lemon juice

Dressing (Makes 8 Servings)

  • 5g feta cheese, made from goat or sheep’s milk
  • Buttermilk made with a2 Milk™ (see below)
  • 3 tbsp Cup Olive oil
  • 1 tbsp Parsley, finely chopped
  • ½ tsp Fresh oregano, finely chopped
  • ½ tsp Fresh thyme, finely chopped
  • 2 tsp Fresh lemon zest
  • 1 tbsp Fresh lemon juice
  • Salt and pepper, to taste


  • 120ml Whole a2 Milk™
  • 1 tsp. Cream Of Tartar


  • In a mixing bowl, whisk together the a2 Milk™ and the cream of tartar. Allow the buttermilk mixture to thicken for 20 minutes.
  • To make the dressing, combine all of the ingredients in a blender. Season with salt and pepper and blend until smooth.
  • To make the salad, combine the chopped cucumber and avocados in a bowl and sprinkle the lemon juice over top.
  • Drizzle the salad with the prepared dressing and toss to incorporate.
