Spanish Omelette

This chorizo and sweet potato omelette made with a2 Milk™ is a must-try. There’s no doubt about it, you’ll love the difference!

Making this dish couldn’t be easier; simply sauté the ingredients, combine with whisked a2 Milk™ and eggs, then pop under the grill until golden.

It’s delicious on its own but we think it’s best enjoyed with fresh salad leaves, juicy tomatoes and freshly baked bread that’s been covered with homemade a2 Milk™ butter!

  • 1 tbsp oil
  • 1 small onion, diced
  • 150g cooking chorizo, diced
  • 1 medium sweet potato, peeled and cubed
  • 6 medium free-range eggs
  • 100ml Semi-Skimmed a2 Milk™
  • ½ tsp black pepper
  • ¼ tsp salt
  • 10g fresh parsley, finely chopped (optional)


  • Heat the oil in a large non-stick oven-proof frying pan over a medium heat. Once hot, add the onion, chorizo and sweet potato, reduce the heat and fry for 15-20 minutes, stirring often, or until the sweet potato is soft.
  • Preheat your grill to hot.
  • Whisk the eggs, Semi-Skimmed a2 Milk™, salt and black pepper until combined.
  • Pour the eggs into the pan and cook for 4-5 minutes or until the bottom of the omelette has set.
  • Transfer the pan to the grill and cook for a further 4-5 minutes, or until the omelette has set on top.
  • Transfer to a board or serving plate and garnish with the chopped parsley. Serve with a simple side salad.
