This delicious double cream is perfect to use in homemade A1 protein free butter, in cakes, soups, tasty pasta sauces, or served on the side of some delicious fresh strawberries. Double cream just makes everything a little bit better.
Yield: About 2 cups of cream
Step 1: In a large pot over medium-low heat, bring the milk to a soft boil until it turns foamy.
Step 2: Collect the fats rising to the top with a slotted spoon and transfer into a clean airtight container.
Step 3: Allow to rest in the fridge for about a day, so that the cream can set.
Step 4: When you first get it out the fridge, it will look a bit lumpy. Give it a quick whizz in the blender and the cream will become smooth and silky, ready to be used in your favourite recipes.
