Homemade kefir - a2 Milk™

Homemade kefir

Rich in protein, vitamins and other important nutrients, Kefir is fast becoming a must-have “superfood”. But if you would like to try a Kefir that is naturally free from the A1 protein, why not try making it at home with a2 Milk™? No fancy equipment is required and all you need is just 2 ingredients! You can even experiment a little and add your own flavourings to keep your Kefir moments new and exciting.

Makes: 250 ml

Ingredients

  • 250ml fresh whole a2 Milk™
  • 1tbsp milk kefir grains or powder

Kitchen Equipment

  • 2 ½ lt mason jars
  • kitchen cloth or strainer
Kefir Step 1

Step 1: Place the milk kefir grains/powder into the jar.

Step 2: Pour a2 Milk™ over the kefir grains/powder.

Step 3: Cover the jar with the lid, but do not close it, so that the kefir can “breath” a little. Alternatively, cover the top of the jar with a cheesecloth and secure with a rubber band. Allow the jar to sit at room temperature (ideally between 19-24 degrees) for 24 hours.

Kefir Step 4

Step 4: Once the 24 hours have passed, you can stir the kefir. Do not worry if it’s too thick (it usually is if you use kefir grains), it’s perfectly normal. Using a strainer or kitchen cloth, strain the prepared mixture into another jar, to separate the grains from the ready-to-drink kefir. If you’re using the milk kefir powder, you don’t necessarily need to strain, and the kefir is ready to drink immediately.

Kefir Step 5

Step 5: Store in the fridge for up to 3 days. If you have used the powder and want to make a new batch of kefir, just save 60ml from the kefir you have just prepared and repeat the process from step 1. If you’ve used the grains, after straining the kefir, reuse the grains  immediately,
