Muhalabeieh - a2 Milk™

Muhalabeih is a traditional middle eastern milk pudding that can be eaten chilled or warm, right after it’s been cooked. Our recipe uses a2 Milk™, infused with rose water and can be garnished with whatever takes your fancy; almonds, desiccated coconut, pomegranate seeds or even cocoa nibs! We’ve used crushed pistachio nuts and a sprinkling of rose petals to add a flash of colour. For those of us who are you’re trying to cut down on a few calories, you could reduce the sugar to 2tbsp instead of 100 grams. Four simple ingredients, one exotic dessert!

  • 500 ml of a2 Milk™ (Whole or Semi Skimmed)
  • 100g sugar
  • 3 tbsp cornflour
  • 1 tbsp rose water
  • Garnish of your choice

  • Pour a2 Milk™ of your choice in to a sauce pan, and heat on a medium heat.
  • Next add the sugar, corn flower and rose water
  • Continuously whisk. Once it starts to thicken remove from the heat
  • Divide in to 4 (completely dry) glass dishes.
  • Let the mixture cool at room temperature for about 30 minutes. You will see it begin to thicken.
  • After 30 minutes transfer to the fridge for a minimum of 2 hours.
  • Once completely chilled, flip the glass dishes over on a plate and tip the Muhalabieh out then garnish with your topping. We used chopped pistachios and rose petals, for texture and colour.
