Eggs and Avocado

The avocado craze just keeps going and going! And why shouldn’t it? They contain more potassium than a banana, they’re jam packed with healthy fats, they’re super versatile and they taste absolutely delicious!

We’ve teamed them with something else that will never go out of fashion – scrambled eggs made with award-winning a2 Milk™. a2 Milk™ is the only cows’ milk that naturally contains only the A2 protein and none of the A1 protein.

We think this classic combo with the addition of a2 Milk™ makes a breakfast fit for a King!

Servings: 2-3


  • 4 large free-range eggs
  • 12 tbsp of Whole or Semi-skimmed a2 Milk™
  • Salt and pepper to taste
  • 1 large avocado
  • A knob of goats’ butter, or frying spray


  • Whisk together the eggs, a2 Milk™ and a pinch of salt and pepper until the ingredients are combined in to a smooth mixture. The more you whisk, the fluffier your eggs will be.
  • Cut your avocado in half, and carefully remove the stone.
  • Scrape out the insides of the avocado in to a bowl, add some seasoning if you’d like to and smash the avocado using the back of a fork. Keep smashing until you get your desired consistency – completely smooth or with lumps, the choice is yours.
  • Next, heat a small frying pan on a medium heat and melt the goats’ butter. Be careful not to burn the butter as it will discolour the eggs. Alternatively, give the pan a coating of frying spray.
  • Pour in the mixture and leave it to settle for for 20 seconds. Then, using a spatula or wooden spoon, lift and fold over from the bottom of the pan. Continue to do this approximately every 15-20 seconds.
  • If the eggs are cooking too quickly and browning; reduce the heat.
  • Whilst the eggs are cooking, toast the bread to your liking and then layer on the smashed avocado.
  • When the eggs are soft and fluffy and cooked to your liking, add them to the top of the smashed avocado toast and enjoy your royal breakfast!
