Yorkshire Parkin - a2 Milk™

Yorkshire Parkin

The sticky, rich and spicy ginger flavour makes the Yorkshire Parkin a delicious winter warmer.

Our version is made lighter by simply swapping to “good for you” ingredients, meaning you can now indulge without feeling guilty.

Best served with a mug of something hot or add lashings of homemade a2 Milk™ custard.


  • 4 tbsp Whole a2 Milk™
  • 60g fine organic brown sugar
  • 80g treacle (or molasses)
  • 1 tbsp coconut oil
  • 150g runny acacia honey (or golden syrup)
  • 250g organic all-purpose flour
  • 100g medium oatmeal
  • 1+1/2 tsp baking powder
  • 3 tsp ginger powder
  • 1 tsp cinnamon powder
  • a pinch of sea salt
  • 1 large free-range egg
  • 100ml extra-virgin olive oil
  • 80ml lukewarm water


  • Heat the oven to 160°C/ 140°C fan. Grease a 22cm square or rectangular cake pan and line with parchment paper.
  • To make the syrup place sugar, treacle (or molasses), coconut oil, honey and a splash of water in a small pan over a slow heat and stir the mixture until the sugar has fully dissolved.
  • Remove from the heat, place to one side and allow to cool slightly.
  • In a large bowl mix together the flour, oats, baking powder, ginger, cinnamon and salt.
  • Gently stir the syrup mixture into the dry ingredients until fully combined.
  • In a medium bowl whisk together the egg, olive oil and a2 Milk™ until the mixture is pale and frothy, then gently fold into the prepared batter and mix until all ingredients are combined.
  • Pour the batter into prepared baking tin and bake in the oven for 40-50 minutes, or until a toothpick inserted in the middle comes out clean.
  • Remove the cake from the oven and allow to cool completely, then cut into squares and serve.
