Blueberry clafoutis - a2 Milk™

Blueberry clafoutis

A French classic dessert, this blueberry clafoutis is incredibly easy to make with very simple ingredients, including fresh whole a2 Milk™ that contains only the A2 protein. Packed with flavour and easy to customise with your favourite fruits, this clafoutis makes a lovely dessert or rich breakfast alike!

Ingredients

  • 300g fresh blueberries
  • olive oil, for greasing
  • 1 tbsp sugar

For the batter:

  • 3 free-range eggs
  • 250ml fresh whole a2 Milk™
  • 100g sugar
  • 1 tsp vanilla extract
  • 65g all-purpose flour
  • a pinch of sea salt

Directions

 

Step 1

Step 1: Arrange a rack in the middle of the oven and heat to 190°C. Grease a 10-inch cast iron skillet with olive oil, sprinkle with sugar, arrange the blueberries evenly onto the bottom of the pan, and set aside.

Step 2

Step 2: Whisk together the eggs, milk, sugar, vanilla extract, followed by the flour and a pinch of salt. Mix all the ingredients until smooth.

Step 3: Pour the batter into the prepared pan.

Step 4: Bake in the oven until set and puffed up, and lightly golden-brown around the edges, about 35-40 minutes.

Step 5: Remove from the oven, place the skillet on a wire rack and allow to cool for 10 minutes, then serve. Store in an airtight container in the fridge for up to 2 days.
